									 Watermelon Fruit Basket 
									From the latest addition to our fruit carving book line, Vegetable & Fruit Carving Exquisite Vessel, we offer directions on how to make an unusual covered watermelon basket for serving your fruit salad recipes (or see our fruit salad recipe) for summer picnics and parties. 
									Materials and Tools :
									Watermelon, turnip, carving knives, thin knife, and fruit scoop
									 
									    - Choose a round watermelon with thick skin. Wash	with water and towel dry. Peel the green off slightly. Neaten.
                                  								  
										- Cut the watermelon in half. Scoop out all the flesh, and neaten. For the upper part, cut out 1.5 cm. wide rim. Cut deeply to make the rim stand out. Do the same with the rim of the lower part. Draw the patterns all around as shown.
 
										- For the lid, use the carving knife to cut through along the drawing. Then neaten the patterns.
    
										- At the top of the lid, cut the turnip to be 8-10 cm. long. Shape the tip to curl slightly. Cut out 0.5 cm. thick base. Make deep cuts to remove the flesh, and neaten. Carving out,the pattern by cutting above the curl to make notched petals.
Remove the flesh and neaten. Proceed the same way for one more row. Groove the middle of the petal, and carve out the top. Neaten. Then grove horizontal tracks, insert a stick and attach it to the lid.

                                      Beef with Black Bean Sauce  
                                      
                                      
                                        - Trim  away any fat from steak. Cut steak into 5cm x 5mm (2in x 1/4in) strips.  Combine in bowl with egg white, sherry, soy sauce and corn flour, mix  well. Let stand 30 minutes.
 
									    - Put beans in bowl, cover with  water, allow to stand 15 minutes, drain and rinse under cold running  water. Put onto a plate, add sugar and one teaspoon water, mash well.  Chop shallots into 2.5cm (1in) pieces, cut pepper in half, remove  seeds, cut each half into thin strips.
 
									    - Add two tablespoons  oil to pan or wok, add shallots, red pepper, bamboo shoots and curry  powder, sauté two minutes, remove from wok. Heat remaining oil in wok,  add meat and marinade, cook until browned.
