Tom Yum SoupVegetarian Tom Yum "Shrimp" Soup

This recipe for the famous Vegetarian Tom Yum Soup, from Thai Vegetarian Cooking, solves the tricky problem of achieving a delicious 'umami' taste while still being vegetarian. See our site for more details about Tom Yum Soup and this recipe. It does not contain real shrimp but a 100% vegetarian alternative.

Ingredients:

Preparation:

  1. In a pot, bring water to a boil over medium heat. Add galangal, lemongrass, kaffir lime leaves and pickled garlic. Bring to a boil again and add the straw mushrooms, cook until just done. Season with roasted chili paste, light soy sauce, salt, sugar and lime juice. Stir to combine. Add vegetarian prawns (if using) and cook for a further 3 minutes until done. Add coconut milk and cook until boiling. Add hot chilies and coriander, turn off the heat.
  2. Ladle into a serving bowl and garnish with kaffir lime leaves, coriander leaves, lemongrass and hot chilies. Serve hot. (Serves 4)
