Pork Satay (Moo Satay)
Satay is a favorite street food in Thailand. It's simple to make - marinate meat or tempeh, skewer, and grill. Serve with ready-made peanut sauce or make your own peanut sauce from scratch for a more sophisticated taste. Garnish with Thai cucumber salad and raw cabbage. Satay Sauce Ingredients
Preparing the Satay Sauce:
Mix the roasted peanut with the curry paste. Heat 1 cup of coconut milk over medium heat until oil surfaces, add the curry paste mixture and stir well. Add the remaining coconut milk, stir again, then reduce the heat. Stir constantly to prevent from sticking. Season to taste with sugar, tamarind juice and salt.
When the sauce thickens, remove and leave to cool. Stir lightly and turn out onto a sauce dish.
