Straw mushrooms (volvariella volvacea or het fang in Thai) are small dome-shaped brown and white mushrooms popular in Asian cuisine. They are most often added to Tom Yum Soup for Thai cooking. This type of mushroom adds texture and subsistence to the dish. Additionally, they tend to take on the flavors of the other ingredients. Traditionally grown on rice straw, this type of mushroom is highly perishable, making it is practical to use canned mushrooms.
To use, drain and rinse thoroughly, discarding any fluid. Store covered with water in a glass or plastic container, changing the water every few days for up to one week.
