|Grachai (also known as wild ginger, krachai, lesser ginger, kaempferia panduratum, zerumbet, boesenbergia pandurata or lesser galanga) is a rhizome with long orange finger-like roots. A member of the ginger family, it is most often used in Thai seafood dishes, because of its distinctive aromatic flavor. It is also a key ingredient in Kanom Jeen Namya.|
High in Vitamin A, grachai is appreciated for many curative powers. Rarely available fresh in the US, substitute pickled grachai by rinsing and soaking in water for a few minutes before using. Grachai is also sometimes called Chinese Keys.
Store refrigerated after opening.
