Som Tum Sauce is used to quickly prepare Green Papaya Salad (Som Tum
), a famous spicy salad originating in Laos and the Isan region of northeastern Thailand. Add this ready-prepared sauce to raw, shredded green papaya and/or grated carrots and pound in a clay mortar and pestle set. Season to taste with fish sauce. Garnsh with cherry tomatoes and roasted peanuts for more flavor and color. The flavor should be a balance of sweet, sour and salty.
