 A member of the zingeberacea (ginger) family, Turmeric (curcuma longo or kumin in Thai) is a rhizome that is used as a spice and for its yellow color. In fact, it is one of the very few spices that serves this dual purpose. Sometimes called poor man's saffron, its golden hue adds color and flavor to many Thai dishes, including Thai curry. It is often added to seafood dishes, as it takes away fishy odors. Turmeric, called haldi in India, also gives a bright pumpkin orange color to the curries of India and Southeast Asia.Turmeric is used for color in many other foods, especially ordinary yellow mustard. It’s bright color is also prized for dying clothing, especially in southern and eastern Asia. Take care when using, as it may stain clothing and porous surfaces.
