Dried Whole Chilli Peppers (prik haeng in Thai) are integral to Thai cooking and well known for being spicy. Fully ripened whole Thai chile peppers are sun-dried to preserve.
To prepare, pound the chilies in a granite stone mortar and pestle to make homemade curry paste or dry roast whole to add to rice dishes or Kanom Jeen (a spaghetti like Thai noodle dish).
To decrease the spiciness of dried chilies they may be deseeded, by cutting off the end at the stem crosswise, and then rolling the pod to loosen the seeds and then shaking out the seeds. Pre-soak as specified in recipes.
Store dried chilies in a tightly sealed in a non-reactive metal jar or glass container for up to one year.
