Oyster Sauce
Oyster Sauce should be a stock ingredient in your Thai kitchen and Mae Krua is one of the best brands available because it is made from authentic oyster extract, not imitation. Based on oyster extract boiled with sugar, salt, wheat flour, starch, caramel and water this seasoning sauce is a important ingredient throughout Asia. Its intense salty flavor, and velvet texture, adds a handsome brown color to stir-fry noodles and vegetables. Try it with broccoli, rapini, brussel sprouts, bok choy, or Chinese broccoli (gai lahn). Spicy Fried Chicken (Pad Kee Mao Kai Tod)

  • 11 oz. chicken, minced
  • 7 pcs. red pepper, chopped
  • 10 pcs garlic cloves minced
  • 1 tbsp. Fish Sauce
  • 2 tbsp. vegetable oil
  • 1 oz. sweet basil leaves
  • 4 tbsp. chicken stock
  • 1 tbsp. Oyster Sauce
  1. Marinate the chicken in the fish sauce.
  2. Place the chicken in a casserole and microwave at 1000 w for 1 minute (or 900 w for 1 minute 20 seconds).
  3. Combine the red pepper, minced garlic and chicken.
  4. Microwave at 1000 w for 1 minute (900 w for 1 minute 15 second).
  5. Season with the oyster sauce and add the chicken stock and sweet basil leaves.
  6. Stir lightly and cook covered at 1000 w for 1 minute (900 w for 1 minute 30 second).
