Chef Keo's Evil Jungle Prince with Chicken

This spicy flavored dish's name was created by Chef Keo Sananikone, owner of Keo's Thai Cuisine restaurant in Honolulu, Hawaii and has been mentioned in Bon Appetit, Food & Wine, Bazaar, The New York Times and Los Angeles Times according to his cookbook. This dish can also be prepared with shrimp, beef or pork.

Pound together the red chili peppers, lemongrass and kaffir lime leaves in a mortar and pestle or process in a blender or food processor, set aside, Heat oil in a wok over medium-high heat and saute spice mixture for about 3 minutes, until fragrant. Add coconut milk and stir to combine and cook for 2 more minutes. Add chicken and cook for another 5 minutes until cooked through. Reduce heat to low, add fish sauce and basil and stir to combine. Serve over steamed Thai jasmine rice.
