Green Curry is one of the most popular curry dishes in Thailand. Green Curry Paste, the foundation of this type of curry, is prepared from fresh green chillies, lemon grass, galanga, zest of the kaffir lime, garlic, onion and salt. Refreshingly herbal, green curry is cooked with coconut milk and combines especially well with seafood (try salmon). In Thailand, most often it is prepared with fish dumplings and green pea-sized eggplant. Green Curry Paste may also be prepared with beef, chicken or tofu.
